I find that if you make friends with a local breakfast joint, you can usually get them to save you some. some of them will have egg boogers, but for free flats it's not a big thing to pick through for the cleaner ones?

When I used them, I would call my local Perkins restaurant on a Friday or Saturday evening and request to talk to the kitchen manager, and then ask if they could please keep them the following morning and I would pick them up after breakfast rush was over.

You want the omlet cartons. Those are the clean ones. I used to be the breakfast guy. haha! Usually eggs that are served for individual orders are taken right off the carton while omlet mix is made in bulk. Find the guy who whips up a case of eggs at a time, he's got the hookup. :)
